The Business of food

What鈥檚 for dinner? The answer to that question has cultural, historical, scientific, and industrial roots. Food has influenced human development, it has built and destroyed civilizations, it has created entire industries, and it has shaped cultures all over the world. Food is necessary for survival, but what we eat, how we get it, and why we eat it are more comprehensive concerns than simply eating food for sustenance. The Business of Food will set the table for a feast of information on how food is grown, produced, packaged, distributed, and marketed. Through readings, podcasts, film, guest speakers, field trips, assignments, and an engaging final project, we鈥檒l explore the business of food through an interdisciplinary lens as we develop a new appreciation for the rich and intriguing concept of what we eat. *Course not recommended for students with severe food allergies.
